1 cup diced watermelon
2 TBS chopped fresh cilantro stems and leaves
4 plum tomatoes, seeded and diced
**Dice the tomatoes and melon the same size
2 green onions,finely sliced and chopped
Zest and juice of 1 lime
Salt and freshly ground pepper to taste.
If you are taking this to share with a big event you will probably want to triple this recipe.
We did think that it needed a bit more melon than the recipe calls for, but I suppose it depends on the melon and your taste, also let it refrigerate for an hour to really get the tastes to meld together
